Carne Asada Loaded Fries

617 Cal Carne Asada Loaded Fries

Ingredients

Ingredients:

1.5lbs Flank Steak (you will only use 6oz on the skillet)

5 Cloves Garlic

40g White Onion

1 Serrano Pepper

Handful Cilantro

Juice 1 Small Lime

Juice from ½ Orange

50g Reduced Sodium Soy Sauce

25g Red Wine Vinegar

Sea Salt

Chili Powder

Black Pepper

Red Pepper Flakes

250g Russet Potatoes

 

Toppings:

28g 2% Colby Jack Cheese

Homemade Pico

1.5oz Guac

40g Plain Non Fat Greek Yogurt

Directions

Directions:

1.)  Take your 1.5lbs Flank Steak Strip and cut against the grain and at an angle into thinner strips. This just makes the marinating and cooking process much more efficient. If this is difficult, I recommend putting the steak in the freezer for about 10-15 minutes to make it much easier to cut.

2.) Now make your marinade. Add your garlic, onion and serrano pepper into a small blend a pulse a few times to mince. Then add your cilantro, lime juice, orange juice, soy sauce, red wine vinegar, sea salt, chili powder, black pepper and red pepper flakes. Blend for 10-20 seconds.

3.) Now combine your strips of flank steak with the marinade. I added mine to a zip lock bag to help evenly disperse the marinade with the steak. Add to the fridge and let marinate for as long as you patience can handle! At least an hour but I do recommend overnight.

4.) Slices your russet potatoes into crinkle cut fries. I use a hand held crinkle cutter I got off amazon for like $10. Highly recommend! Add them to a bowl with ice water to soak for 30 minutes.

5.) Once done soaking, pat the fries dry and then spray with non stick cooking spray. Season with sea salt and garlic powder. Don’t be shy with these! Add to the air fryer on 400 degrees F for 18-20 minutes. Shake them around every 5 minutes or so to make sure they cook evenly.

6.) Preheat your stove top pan to a 7/10 heat. Add a couple strips to your pan but make sure they are not over crowded! Give them plenty of room to cook. They cook fast. About 2 minutes on each side and they are good to go for a nice medium wellness. Wait 10 minutes or so to cut the steak.

7.) Now it’s time to put together the skillet. Add your fries skillet and then add your cheese. Air fry for a minute or so to melt the cheese. Then add your steak, guac, greek yogurt and a few serrano pepper slices. Enjoy!
