45 Cal Meal Prep Mini McGriddles

Ingredients

100g Pancake Mix

65g Vanilla Whey/Casein Blend Protein Powder

20g Coconut Flour

8g Zero Cal Sweetener

125g Egg Whites

60g Sugar Free Pancake Syrup

240g Fat Free Fairlife Milk

8oz 96/4 Lean Ground Beef

8oz 99/1 Lean Ground Turkey

4 Large Eggs

Sea Salt

Black Pepper

Directions

1.) Add all your dry pancake ingredients (first four ingredients listed) into a bowl and mix to avoid clumping.

2.) Now add your egg whites and pancake syrup. Then slowly add your milk and mix. This makes sure you get a smooth consistency instead of clumps. Set to the side.

3.) Preheat a pan to a 7/10 heat. Add your ground beef and turkey. Break up into small pieces and then season with sea salt and black pepper.

4.) Once the meat is almost done, bring the heat of the pan to 3/10 and add your large eggs. Lightly scramble and then season with sea salt and black pepper. Then combine with the meat.

5.) Now add that whole pan to the pancake batter. Add your 2% sharp cheddar cheese as well. Mix all together.

6.) Take your mini muffin tin and add you batter evenly to each. This makes 36 mini mcgriddles but my pan only hold 24 so did this in two batches.

7.) Add to the oven on 375 degrees F for 13 minutes. Then enjoy!
