Ingredients for Spaghetti O’s:
200g Ring Pasta (bought off amazon and yes it was expensive lol. Any pasta will work fine!)
65g Tomato Paste
3 Cloves Minced Garlic
4 Cups Reduced Sodium Beef Broth
225g Marinara (Pick the lowest cal one you can! These can end up being super high cal)
Onion Powder
2g Zero Cal Sweetener
Big Pinch Sea Salt (can always add more)
15g Parmesan
8g Nutritional Yeast
Basil
Ingredients for Mini Meatballs (makes 45):
16oz 96/4 Lean Ground Beef
25g Yellow Mustard
15g Parmesan
8g Parsley
2g Basil
3 Cloves Minced Garlic
Sea Salt, Black Pepper, Oregano
Directions:
1.) Add all your meatball ingredients into a bowl and mix to combine. Then form into 45 mini meatballs. Set them to the side.
2.) Preheat your stove top pan to a 6/10 heat. Spray with non stick olive oil spray. Add your tomato paste and minced garlic. Cook for about a minute and then add your marinara, beef broth, onion powder, zero cal sweetener, and a big pinch of sea salt. Simmer for 12-15 minutes.
3.) Now add your ring pasta and cook for another 10 minutes or until it achieves a thick spaghetti o’s like consistency.
4.) About 5 minutes or so into cooking the spaghetti o’s, on another pan, brown the outside of your mini meatballs and then add them to the spaghetti o’s.
5.) Then mix in your parmesan and nutritional yeast. Add a bit more parmesan on top for aesthetics and then some fresh chopped basil. Recipe serves 4! Enjoy!
