Pepperoni Pizza Baked Potato “Toast”

Ingredients

Ingredients for 8 Pizza Toast:

2 Medium Russet Potatoes (about 300g each)

100g Marinara of your choice

80g Part Skim Mozzarella

16 Turkey Pepperonis

Fresh Chopped Basil & Cilantro

Sea Salt

Non Stick Butter Spray

Directions

1.) Poke holes all around your potatoes with a fork. Spray the outsides of the potatoes with non stick cooking spray and season with sea salt. Press the sea salt into the potatoes with your fingers. Add to your air fryer on 400 degrees F for 30 minutes, flipping after 15 minutes.

2.) Now once your potatoes are done, slice each potato into 4 slices long ways and lay skin side down to help finish cooking the inside. Air fry for another 8 minutes on 400 degrees F.

3.) Once those are done, add to each your marinara, 10g of your mozzarella, fresh cilantro and basil and then turkey pepperonis.

5.) Add back to your air fryer on 350 degrees F for 4-5 minutes. Keep in mind that your pepperonis might fly around so make sure to check after a minute or so. If they did, just press them back into the melted cheese and they won’t fly away anymore! Then once they are done cooking, it’s time to enjoy!
