Ingredients (Enough for 4 Protein Pop Tarts):
70g All Purpose Flour
45g Flex Vanilla Whey Protein Powder (or protein of your choice) Code “FDL” saves you 15% on proteincookiebutter.com
24g Black Cocoa Powder
20g Almond Flour
8g Zero Cal Sweetener of your choice
140 Plain Non Fat Greek Yogurt
1.) Add your dry ingredients into your food processor and pulse to combine. Can be done in a regular bowl as well if you don’t have one.
2.) Now add your greek yogurt to the food processor and then pulse till you have a big dough ball.
3.) Add ball to freezer for 15-20 minutes till cool to the touch and is easy to work with
4.) Highly highly recommend getting a counter top silicone matt to use for rolling dough! I use it all the time if I’m doing anything on the counter and you’ll be sooo glad you did!
5.) Add your silicone matt to your counter top and sprinkle some all purpose on top to help make it easier to roll out. Then take off about 1/3rd of dough and roll in the flour on the matt. Now take your rolling pin and roll out your dough as far much as you can! Be patient and gentle with the dough.
6.) Once dough starts sticking to your rolling pin, add a little bit more flour to help it not stick. And if you are worried about adding more macros because of the extra flour, you will have dough that is leftover at the end so don’t stress over it! It’ll all work itself out.
7.) Repeat rolling process and once you have a large piece of dough rolled out, and then take your pizza cutter and slice out a rectangle pop tart shape piece of dough. This will be you mold for old pieces. Take that piece of dough and then add it onto another open spot of the dough you rolled out so you can consistently cut out the same size pop tarts! Two pieces of rectangles equal one pop tart! So you’ll make 8-10 of them for 4-5 pop tarts!
8.) Repeat this process until you use all your dough pieces. Now lay down one of your dough pieces, add your filling to the middle leaving at least an ½ inch around the edges so you can pinch the pop tart shut with the top piece.
9.) Brush on egg white wash around those edges where the filling is not. Then add the top piece of dough and press the edges shut. Add your egg white wash on top covering the whole pop tart.
10.) Now press the edges shut and cut off the uneven edges with your pizza cutter. Then crimp edges with your fork and poke holes in the top so your pop tart can breath in the oven and doesn’t explode!
11.) Add to over for 7 minutes on 400 degrees F! Take out and let cool on cooling rack!
12.) While those are cooling, make up your protein icing! Add it on top once pop tarts are at room temp! Then add icing on top of pop tarts and add them to the fridge to help them set. Then enjoy!
Pro Tip: You can bake the pop tarts in an air fryer!! Cook at 400 degrees F for 4 minutes and then flip and cook for another 3 minutes! Should be golden and crispy to the touch!
