Low Carb Corn Dogs

Ingredients

Ingredients Makes 1 Corn Dog:

10g Trader Joe’s Light Shredded Mozzarella

20g Part Skim Ricotta Cheese

25g Egg Whites

7g All Purpose Flour (Can sub Gluten Free Flour)

2g Coconut Flour

1g Baking Powder

1 Trader Joe’s Garlic & Herb Chicken Sausage 

Directions

  1.  Preheat the oven to 450 degrees F. Add the mozzarella and ricotta into a microwave safe bowl. Add the dry ingredients in separate bowl and mix together to avoid clumping. Place the ricotta and mozzarella to the microwave for 15 seconds.
  2.  Remove from the microwave, add the egg whites to the bowl and mix together. Mix as well as possible. Add the dry ingredients and mix together until there is a thick paste-like consistency.
  3. Take a pan and cover in parchment paper. Now add the sausage to a corn dog stick and then coat the outsides of the sausage with the paste until it is all covered. Add to the parchment paper and place in the oven for 12-15 minutes until golden brown! Then take out, let cool and enjoy!
