LOW CARB CINNAMON BROWN SUGAR BAGEL

Low Carb Cinnamon Brown Sugar Bagel

Ingredients

Ingredients (Makes 2 Bagels):

21g Trader Joe’s Light Shredded Mozzarella

21g Fat Free Cream Cheese

1 Whole Egg

15g All Purpose Flour

3g Coconut Flour

3g Baking Powder

2g Stevia

1g Ground Cinnamon

1g Vanilla Extract

Ingredients for Cinnamon Brown Sugar Coating on outside (for 2 Bagels:

5g Cinnamon Brown Sugar

5g Ground Cinnamon

5g Stevia

Directions

1.) Preheat your oven to 400 degrees F. Then take your mozzarella and cream cheese and put into a microwaves safe bowl. Microwave for 20 seconds to melt. Then take out and mix. Then add you in your whole egg and mix that in. It is not going to mix super well and will look clumpy. That’s ok.

2.) Now add your all purpose flour, coconut flour and baking powder into a bowl. Mix together to avoid clumping. Then add that to your wet mixture and mix until you have a batter like consistency. This will not be like a dough like consistency. This will be more like a hybrid between a cake batter and wet dough like consistency. Lastly, add in your ground cinnamon, stevia, and vanilla extract and mix those in.

3.) Now take your donut pan (https://amzn.to/2w2lp59) and spray two donut cavities with some non stick butter spray and then evenly add your bagels into each of them. Add some more bagel seasoning on top. Now add to your oven for 10-12 minutes. This may vary due to your oven so watch them but do not open your oven too much because this will mess with the temp in the oven.

4.) Bagels will be done when golden brown on top. Take out and let cool for 10-15 minutes on your cooling rack (https://amzn.to/2HF0beZ). Once cool, add your cinnamon brown sugar mixture to a bowl and mix together. Then spray the tops of your bagels with non stick butter spray and then coat the outsides of them in the mixture. Then slice open and add your toppings of choice and enjoy!
