Funfetti Birthday Cake Protein Crepes

Ingredients

Ingredients for Crepes (makes 3 crepes):

5g Zero Cal Sweetener of your Choice

150g Egg Whites

45g Plain Non Fat Greek Yogurt

45g Unsweetened Apple Sauce

Ingredient for Protein Filling/Icing:

8g Coconut Flour

8g Sugar Free/Fat Free White Chocolate Pudding Mix (optional)

4g Zero Cal Sweetener of your Choice

80g Plain Non Fat Greek Yogurt

Toppings:

20g Sprinkles

Directions

1.) Preheat stove top pan to 5/10 heat. Add your dry crepe ingredient into one bowl and mix. Then add your wet crepe ingredients into another bowl and mix. Then add dry to wet ingredient and whisk together to get rid of any clumps.

2.) Wait till stovetop pan is preheated to add your batter to it. Add ⅓ of your batter to the middle of your pan and then pick up your pan and do a circular motion to spread the batter on the whole pan. Add cover on top of pan.

3.) Once you start to see little bubbles and the edges of the crepe start to curl up, gently flip over the crepe and quickly cook the other side for 15-30 seconds. Then flip back over and fold like a crepe and take off pan. Repeat this process for the other 2 crepes. I like my crepes cold so I add them to a cooling rack to cool while I’m making my protein filling/icing.

4.) If you like you crepes hot, then I’d recommend making this protein filling/icing prior to making the crepes. But if not, then add your dry filling ingredients into a bowl and mix to avoid clumping. Then slowly add a little bit of cold water and mixing and repeating till you have a thick icing like consistency. Add to freezer to help thicken up even more.

5.) Once all is ready, unwrap your crepes, add your some sprinkles and frosting to the middle, and fold back up. Save a little bit of filling to be used as a icing on top! Then add icing on top along with sprinkles and whipped cream! Then enjoy!

How to make this lower protein and higher carb?

You can sub pancake mix with protein powder in a 1:1 ratio. So for every 1g of protein powder you take out, replace with 1g pancake mix.
