Chocolate Chip Banana Bread Jumbo Protein Muffins Recipe

Ingredients

Ingredients for 6 Jumbo Muffins:

400g Banana
200g Egg Whites
100g Unsweetened Vanilla Almond Milk
120g Flex Vanilla Vegan Protein Powder (or protein of your choice) Code “FDL” saves you 15% on proteincookiebutter.com
60g Coconut Flour
12g Zero Cal Sweetener of your Choice
6g Ground Cinnamon
12g Baking Powder
30g Mini Chocolate Chips (can add more if you’d like!)

Directions

1) Preheat oven to 350 degrees F. Add your banana to a bowl mash till there are no more chunks. Then add your egg whites + almond milk and mix together.
2) Add your dry ingredients (except mini chocolate chips) to another bowl and mix to avoid clumping.
3) Now combine dry with the wet and mix.
4) Add batter to your jumbo muffin molds (I used these silicone ones off amazon!)
5) Add to oven for 30 minutes until tops are cracked and you can see some golden brown spots.
6)Take out of muffins tins, add to cooling rack to cool and then enjoy whenever they are the temp you’d like to devour them at!
