Macros for the WHOLE Sandwich:
407 Cals, 45g Carbs, 7.5g Fat, 40g Protein
Ingredients for Buffalo Chicken Patties (makes 8):
40oz Chicken Breast
80g All Purpose Flour (50g accounted for in macros)
20g Corn Starch (12g accounted for in macros)
Salt
Garlic Powder
Black Pepper
Paprika
Cayenne
1 Large Egg
25g Egg Whites
Franks Red Hot Buffalo Sauce
100g Panko Bread Crumbs
Non Stick Butter Spray (1/2g Fat added per sandwich for the spray)
Ingredients for 1 Sandwich:
Brioche Bun
Green Leaf Lettuce
Tomato
Red Onion
15g Bolthouse Farms Blue Cheese Dressing
Directions:
1.) Take your chicken breast and flatten to about 1/2in thick. I used my fist so don’t judge me but you can use a pan or a mallet. Now slice each chicken breast in half to the size of a sandwich size patty.
2️.) You will need 3 shallow size bowls to be able to coat the patties in. Add your all-purpose flour, corn starch, and all the seasoning to a bowl. Then add your large egg, 25g egg whites and buffalo sauce to another bowl and whisk. Lastly, add 100g of your panko to your last shallow bowl.
3️.) So now it’s time to dredge the chicken patties. You will have one hand designated as the dry ingredients hand and the other as the wet ingredients hand. Try your best to keep with this because it’ll make this process so much easier.
4️.) I used my left hand as dry and right as wet. Line your dishes in the order of all-purpose flour, egg/egg whites, panko. Now take a chicken tender, dip it into the flour covering all sides. Then dip it into the egg/buffalo sauce covering it like you did in the flour. Add to a pan/cutting board to hold till you add to your air fryer. Repeat this process for all 8 chicken patties.
5️.) I had to do this in 4 batches because my air fryer could hold 2 chicken patties each time. Spray the tops of the chicken patties with your cooking spray and then cook at 400 degrees F for 8 minutes total. At the 5 minutes mark, you will flip the chicken tenders and spray with a bit more cooking spray. Cook for the remaining 3 minutes.
6.) Then brush more buffalo sauce on each side of the patties (don’t be shy!) and air fry for another 2 minutes. Then put together your sandwich starting with your toasted brioche bun, green leaf lettuce, tomato, red onion, then your patty, some bolthouse farm blue cheese dressing and then your top bun. Then enjoy!
