Ingredients for Protein Waffles (makes 8 Protein Waffles):
20g Pancake Mix of your Choice
10g PEScience Gourmet Vanilla Select Protein
5g Coconut Flour
2g Zero Cal Sweetener of your Choice
2g Baking Powder
50g Egg Whites
8g Mini Chocolate Chips
Rest of Ingredients:
3 Slices Center Cut Bacon
2 Large Eggs
100g Russet Potatoes
1.) In a bowl, add all dry pancake ingredients and mix to avoid clumping. Stir in egg whites. Then, slowly add cold water, mix, and repeat until a thick but not too thick batter like consistency is made. Let sit for 5-10 minutes to thicken up.
2.) Chop up russet potato into small blocks. Then place them into a Zip Lock bag and spray with butter spray. Add some sea salt and garlic powder into the bag. Then, close the bag and mix around the potatoes to help season them. Once seasoned, place the potato cubes into the air fryer for 15 minutes at 400F.
3) While the potatoes cook, preheat your stovetop pan to medium heat. Cook up your bacon first in order to use the leftover bacon fat to cook the eggs in! Once bacon is done, place them on a paper towel to help them get crispy.
4.) Crack two eggs to pan and cook. Add cover to the pan to help eggs cook evenly and stay runny.
5.) Now add your waffle batter to the mini waffle makers (Dash brand from Amazon is a personal recommendation) and cook up the two waffles.
6.) Once all is ready to go, place everything on a plate, add some low cal syrup on the waffles, and enjoy!
