Spicy Jalapeno Burger Melt w/ Guacamole

Ingredients

5oz 96/4 Lean Ground Beef

2 Laughing Cow Swiss Cheese Wedges

14g Light Shredded Mozzarella

2 Slices Pumpernickel Rye Bread

30g Reduced Guilt Guacamole from Trader Joes

20g Fresh Jalapenos

Sea Salt

Garlic Powder

Directions

1.) Preheat oven to 450 degrees F and preheat stovetop pan on 7/10 heat. Thinly chop the jalapeno. Spray stove top pan with non stick cooking spray. Add the jalapeno to pan along with a splash of water to help then saute. Add cover on top.

2.) While jalapenos are caramelizing, season ground beef with sea salt and garlic powder. If jalapenos have softened and are looking close to being caramelized, turn down heat on pan to 5/10 and move jalapenos to one side of the pan. Spray the pan with nonstick cooking spray and add ground beef and cook until it starts to golden. Add in 2 cheese wedges and place the cover on top to let them melt a bit.

3.) Mix everything together. Onc ready, lay a slice of bread down flat and add the ground beef and light shredded mozzarella. Then coat the top slice with guacamole. Add the top piece and place in the oven to bake for 6-10 minutes. Keep an eye on it!

4.) Once done, slice in half and enjoy!
