Macros for each Nugget (makes 12):
92 Cals, 10g Carbs, 0.75g Fat, 11.5g Protein
Ingredients (makes 12 Nuggets):
16oz 99/1 Lean Ground Turkey
60g Roasted Red Peppers (I used jarred ones from store)
5g Fresh Chopped Parsley & Cilantro
30g Fresh Chopped Green Onion
2g Sea Salt
15g Panko Bread Crumbs
For Outside Coating:
100g Flour (only actually use 50g of it. Just have more in bowl to make it easier to coat sticks with)
Sea Salt
Garlic Power
50g Egg Whites
1 Large Egg
100g Panko (only use 75g of it)
Directions:
1.) Finely chop your roasted red peppers until they are diced size. Repeat this with your parsley/cilantro and green onion.
2.) Now take your ground turkey and combine with your red peppers, parsley, sea salt and mix together.
3.) Form your ground turkey mixture into 12 equal size nuggets. Same shape as you’d find for chicken nuggets. Add them to a plate covered in parchment paper. Add your nuggets to the freezer until frozen.
4.) Now it’s time to coat your nuggets. I use the left hand/right hand technique to ensure my hands don’t get super clumpy. Left for the dry ingredients and right for the wet. So take one nugget and add to your flour. Coat well and then shake off any excess before adding to the egg mixture.
5.) Now add to the egg bowl and use your right hand to make sure all of the nugget is coated with the egg. Then add to your panko bowl and use your left hand to coat the nugget. Repeat this process for all your nuggets.
6.) Then add to your air fryer and spray with non stick cooking spray of your choice. Air fry on 400 degrees F for 12 minutes flipping halfway through. Spray nuggets again with cooking spray when you flip. Then once done, enjoy!
