Ingredients (makes 5 Big Servings):
400g Macaroni Pasta
450g Fat Free Cottage Cheese
80g Fat Free Fairlife Milk
80g 2% Cheddar Cheese (I only had Colby Jack on hand)
30g Cheddar Powder (same powder you find in the mac & cheese boxes)
10g Nutritional Yeast
Directions
1.) Cook your pasta till slightly under el dente. They will cool a bit more once added to the pan.
2.) Blend the rest of your ingredients (save 40g of your 2% cheese to add later) until smooth.
3.) Add pasta to your pan along with your cheese sauce. Put the pan on a low heat and mix till it starts to really thicken up.
4.) Then add the rest of your cheese and mix in. Then enjoy!
*If you plan on reheating this during the week, I’d suggest just skipping the heat on pan part. Just mix everything together and add to meal prep containers. This will ensure it doesn’t dry out.
