373 Cal Spring Roll Salad with Low Cal Thai Peanut Dressing

Ingredients

1.5lbs Medium Shrimp (Deveined, Tails off)

Blackened Seasoning

250g Romaine

150g Red/Purple Cabbage

150g Carrots

150g Cucumber

150g Red Peppers

40g Jalapenos

15g Cilantro

25g Green Onion

20g Minced Garlic

5g Minced Ginger

 

Low Cal Thai Peanut Dressing:

96g Powdered PB

6g Zero Cal Sweetener

50g Soy Sauce

12g Rice Vinegar

Directions

1.) First let’s make the thai peanut dressing. All your powdered pb and sweetener to a bowl and mix to avoid clumping.

2.) Slowly add cold water and mix till you get a super thick pb consistency. Be careful because you have more liquid ingredients coming. Err on too thick.

3.) Add your soy sauce and rice vinegar to your pb mixture and mix till smooth.

4.) Season your shrimp with your blackened seasoning and then cook on 6/10 heat for 2-3 minute each side. They cook fast.

5.) Then build your salad and enjoy!
