White Chocolate Raspberry XL Protein Breakfast Cookie

360 Cal White Chocolate Raspberry XL Protein Breakfast Cookie

Ingredients

Ingredients (make 3 XL Cookies):

140g Banana

100g Egg Whites

80g Oats

40g Vanilla Vegan Protein Powder

20g PB Party Protein Cookie Butter Powder

20g Powdered PB

6g Zero Cal  Sweetener

4g Baking Soda

Pinch of Salt

45g Mini White Chocolate Chips

100g Raspberries

Directions

1.) Add to a bowl your banana and mash. Then add the rest of your ingredients except your mini white chocolate chips and raspberries. Mix till you get a cookie dough consistency. Then mix in your mini white chocolate chips. Mix. Then your raspberries and mix.

2.) Now take a small parchment paper sheet and add 1/3rd of your cookie dough to it. Form into a cookie. I got these sheets off amazon and they are meant to be parchment sheets for burgers.

3.) Add your cookie to your air fryer and air fry on 250 degrees F for 5-6 minutes. Time will vary based on your air fryer! So if it needs longer, just add it back it till it’s good to go!

4.) Once done, enjoy nice and warm! You can also let these cool! They are amazing that way too.

 

Substitutions:

* If you want to sub the vegan protein for a whey/casein blend, you can but the cookie dough won’t be as thick due to how absorbent the vegan protein is. You might need to add a bit more. Also the cookie will rise more also if a whey/casein blend so might not be as dense.

* Same goes for subbing the protein cookie butter powder. You can sub a 1:1 with your protein powder but know that it won’t be as rich chocolate because of the blend of dense chocolate flavors in the cookie butter powder.

* If you want to sub the banana, you can go with pumpkin. 1:1 sub should be fine but look at the video for the consistency I got and try and match that.
