Chicken Caesar Salad

342 Cal Chicken Caesar Salad

Ingredients

Low Cal Caesar Dressing (total weight 400g aka 12.5 32g Servings)

227g Plain Non Fat Greek yogurt

Juice from ½ Fresh Lemon

14g Olive Oil

30g Worcestershire sauce

5g Dijon Mustard

24g Grated parmesan cheese

2 garlic cloves, minced

1/4 teaspoon Kosher salt

Lemon Basil Chicken Marinade:

1 Lemon

10g Honey

10g Yellow Mustard

Dried Basil

Dried Oregano

Garlic Powder

Onion Powder

Sea Salt

Black Pepper

Red Pepper Flakes

Salad Ingredients:

300g Romaine

200g Yellow Peppers

200g Orange Peppers

200g Baby Cucumbers

200g Grape Tomatoes

24oz Chicken Breast (weighed raw)

Directions

1.) Cook your chicken breast. I marinated my chicken breast for an hour with my Lemon Basil Chicken Marinade and cooked in the air fryer on 400 degrees F for 9 minutes. I also flattened the chicken breasts to make them cook more evenly

2.) Next, add all your caesar dressing ingredients into a bowl and mix till smooth.

3.) Now it’s time to put together the caesar salad. Make sure to grab a BIG bowl to mix all this! Add your romaine, peppers, cucumber, grape tomatoes, chicken, and caesar dressing. Toss well and then add some extra parmesan cheese on top and enjoy!

Do highly recommend if this is going to be a meal prep to leave the dressing on the side. Add your salad ingredients (except dressing) to your meal prep containers and then pack the dressing on the side. Then add dressing when it’s time to eat so the romaine and other vegetables don’t get soggy.
